Curried Cream of Cauliflower Soup

Ingredients:

    • Large head of cauliflower, cut into small pieces
    • 2 Tablespoons vegetable oil
    • 1 teaspoon salt
    • 1 1/2 tablespoons butter
    • 1 yellow onion, diced
    • 1 teaspoon garlic, diced
    • 1 teaspoon curry powder
    • 1 teaspoon cayenne pepper
    • 1 teaspoon ground turmeric
    • 1 quart chicken stock (typically one box)
    • 1 cup heavy cream
    • 2 tablespoons fresh parsley, roughly chopped
    • salt and pepper to taste


Directions:

Preheat oven to 450 degrees.

Toss cauliflower florets, vegetable oil and 1 teaspoon salt in a large bowl. Lay mixture evenly onto a baking sheet and roast for about 25 minutes until browned.

Melt butter in a large saucepan over medium high heat and saute onions until soft. Stir garlic into the onion and continue to cook for about 2 minutes. Add the curry powder, cayenne pepper, and ground turmeric to the onion/garlic mixture. Cook for about 5 minutes, continuously stirring with a wooden spoon.

Add the roasted cauliflower to the saucepan and stir to combine. Pour chicken stock over the cauliflower mixture and cover until the soup comes to a boil.

Remove the lid and reduce the heat to low so that the liquid reduces slightly for about 10 minutes. With an immersion blender, puree the soup mixture until smooth.

Stir cream into the soup; season with salt and pepper to taste. Garnish soup with parsley and enjoy!
